Paleo Shrimp Cakes

Shrimp Cakes

 

Ingredients

  • 1 pound (raw) shrimp, peeled and deveined
  • 1 red or yellow bell pepper, finely chopped
  • 1 clove garlic, minced
  • 2 Tbs green onions (scallions), thinly sliced
  • 1 Tbs lime juice, freshly squeezed
  • 1 Tbs raw honey
  • ½ tsp sea salt (optional)
  • ¼ tsp ground chipotle
  • 1 egg
  • ½ cup cilantro, finely chopped
  • ½ cup almond flour
  • 3 Tbs coconut oil, for sautéing

Instructions

  1. Place shrimp in food processor, pulse until finely chopped.
  2. In a large bowl, combine chopped shrimp, bell pepper, garlic, scallions, lime juice, honey, sea salt (optional), chipotle, egg and cilantro.
  3. Form mixture into 12 (½) inch thick patties, dip each in almond flour, coating thoroughly.
  4. In a large skillet, over medium heat, warm 1 tablespoon oil.
  5. Add 4 patties to the skillet and cook about 5 minutes per side, until browned; remove and place on paper towel lined plate.
  6. Repeat with remaining cakes.

  Box Jump Burpees (can use big tire or park bench)

HARDCORE GET THROUGH AS MANY TIMES AS POSSIBLE IN 25 MINUTES

*Frog Squat---slightly wide stance w/ toes flared out just a bit. Deep squat w/ hips past knees and arms extended down centerline between legs. Finish squat when palms are on ground (looking like a frog ready to hop!) then return to standing

Homemade Paleo Mayo

Homemade Paleo Mayo


Here is a base for whatever flavored Mayonnaise you decide to create.  Super simple just be patient, if you add too much oil too quick, you will break the emlusion and never get it back.  Enjoy

Servings: 4-6
Prep Time: 5 Minutes
Cook Time: 10 Minutes

Tools you may Need:
Ingredients:
  • 2 Eggs yolks
  • 1/4 Tsp Mustard Powder
  • 1 Tbsp Lemon Juice, fresh (this needs to be fresh)
  • 1 Cup oil (Macadamia Oil works best)
  • Salt and Pepper to taste
Process:
  1. Place Egg yolks, mustard powder, and lemon juice in blender or food processor and start running on low.
  2. Once mixed slowly start dripping your oil in
  3. I drip 1 Tbsp of oil at a time and let it mix for at least a minute
  4. As you continue to add your oil, it will emulsify but continue to add slowly so you don’t break it
  5. Once your mayonnaise is done, then you can hand mix in any herbs or spices you need like cumin, rosemary, thyme or anything you can come up with.

Paleo German Apple Pancake




Servings: 8
Prep Time: 15 Minutes
Cook Time: 40 Minutes
Ingredients:

  • 6 Eggs
  • 1 Cup Almond Milk
  • 3 Tbsp Coconut Oil, melted
  • 2 Tsp Vanilla
  • 2 Tsp Pure Maple Syrup
  • 1/4 Cup Coconut Flour
  • 1/2 Tsp Baking Soda
  • 1/8 Tsp Nutmeg
  • 2 Apples, cored and diced
  • 2 Tbsp Coconut Oil
  • 2 Tbsp Raw Organic Honey
  • 1 Tsp Cinnamon
  • 1 Tsp Nutmeg
  • Juice of 1/2 Lemon
  • Handful of crushed pecans
Process:
  1. Preheat Oven to 425 Degrees Fahrenheit
  2. In a large bowl, whisk eggs, almond milk, coconut oil, vanilla, and Maple Syrup
  3. In a small bowl, stir coconut flour, nutmeg, and baking soda
  4. Mix dry ingredients into wet ingredients and beat well to combine, set aside while you prepare the apples
  5. In a small frying pan, heat 2 Tbsp coconut oil and raw organic honey  
  6. Stir in cinnamon and nutmeg and juice of 1/2 Lemon and cook for 1 minute
  7. Add in your apples and sauté until all your apples are nicely coated
  8. Evenly divide your apple mixture between 8 Ramekins greased with coconut oil and then evenly divide your egg mixture on top of the apples between the 8 Ramekins
  9. Place your Ramekins on a baking sheet and bake for 20 Minutes at 425 and then reduce heat to 375 and cook for an additional 20 Minutes
  10. Sprinkle with Pecans when removed from the oven
  11. Enjoy
